Grainery Oatmeal Muffins
Preheat oven to 350 degrees. Line a muffin tin with paper muffin cups or spray with olive oil and set aside.
Pour boiling water over oats in a medium bowl. Stir and let stand for 15 minutes.
Combine both flours, sugar, baking powder, baking soda, and salt in a large bowl.
In a small bowl, whisk together honey, applesauce, egg, oil, and vanilla. Add applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in grated apples.
Divide batter among 12 muffin cups. Sprinkle each muffin with some cinnamon sugar if desired.
Bake in preheated oven for 20 minutes, or until a wooden toothpick inserted in the center of muffin comes out clean. Remove from pan and let cool.
This is a great basic oatmeal muffin recipe. Add more cinnamon for more flavor, pecans, raisins, cranberries, dried cherries, or whatever you are in the mood for!
